Ingredients

1 top sirloin steak (about 1-inch thick)

1-2 tablespoons olive oil

Garlic powder

Fresh rosemary or thyme sprigs (optional)
Instructions

Pat the top sirloin steak dry with paper towels and season generously with salt, pepper, and garlic powder.

Heat a heavy-bottomed skillet (cast iron preferred) over high heat until smoking hot. Add olive oil.

Carefully place the steak in the hot pan and sear for 3-4 minutes per side for medium-rare. Adjust time for desired doneness.

(Optional) During the last minute, add butter and herbs to the pan, spooning melted butter over the steak.
