Description

  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk

  • 4 cups fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups heavy whipping cream, chilled
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries, sliced (for garnish)
  • Mint sprigs (for garnish)
  • Toasted slivered almonds (for garnish)

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

2. Cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.

3. Whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, alternating with milk. Mix until just combined.

4. Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer comes out clean. Cool completely.

5. Combine sliced strawberries, sugar, and lemon juice. Let sit for 30 minutes to 2 hours.

6. Beat heavy cream until soft peaks form. Add powdered sugar and vanilla extract; beat until stiff peaks form.

7. Cut cooled pound cake into 1-inch cubes. Layer half of the pound cake, strawberry filling, and whipped cream in a trifle bowl. Repeat layers.

8. Garnish and chill for at least 2 hours before serving.

Notes

Use room temperature ingredients for the pound cake. Ensure heavy cream is chilled. Can substitute other berries, add custard, or use angel food cake. For adults, add a splash of liqueur to the filling. Adjust sweetness as needed.
