Description
A classic and satisfying breakfast combination of juicy steak and perfectly cooked eggs, customizable to your liking.
Ingredients
- 1 (4-6 oz) steak (sirloin, ribeye, New York strip, or flank steak)
- 2 large eggs
- 1 tablespoon butter or oil
- Salt and freshly ground black pepper to taste
- Optional seasonings: garlic powder, onion powder, paprika
- Garnish: fresh parsley, chives, or your favorite hot sauce
Instructions
1. Pat the steak dry and season generously with salt, pepper, and optional seasonings. Let it sit at room temperature for 30 minutes.
2. Pan-frying: Heat butter/oil in a skillet over medium-high heat. Sear steak for 2-4 minutes per side, then reduce heat and cook to desired doneness. Grilling: Preheat grill to medium-high. Grill for 3-5 minutes per side, then move to a cooler part to finish.
3. Use a meat thermometer to check doneness (Rare: 125°F, Medium-Rare: 130-135°F, Medium: 140-145°F, Medium-Well: 150-155°F, Well-Done: 160°F+). Let rest for 5-10 minutes.
4. Cook eggs to your preference (sunny-side up, over easy, over medium, over hard, scrambled, poached) in the same skillet with a little more butter. Season with salt and pepper.
5. Slice steak against the grain and arrange with eggs. Garnish with parsley or chives.
Notes
Serve with toast, breakfast potatoes, avocado, grilled tomatoes, sauteed mushrooms and spinach, or fruit salad. Experiment with different seasonings and egg preparations.
