Description
Get crispy, flavorful Potatoes O’Brien without the skillet! This easy oven-baked recipe with potatoes, peppers, and onions is a family favorite side dish.
Ingredients
- 2 pounds Yukon Gold potatoes, peeled and diced
- 1 large onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped, for garnish (optional)
Instructions
1. Preheat the oven to 400°F (200°C).
2. Peel and dice the potatoes into approximately 1/2-inch cubes.
3. Dice the onion and bell peppers into similar-sized pieces as the potatoes.
4. In a large bowl, toss the diced potatoes, onion, and bell peppers with olive oil, garlic powder, paprika, salt, and pepper. Ensure all the vegetables are evenly coated with the oil and spices.
5. Spread the vegetable mixture in a single layer on a large baking sheet. Using parchment paper makes cleanup easier.
6. Bake for 30-40 minutes, or until the potatoes are tender and slightly browned, flipping halfway through to ensure even cooking.
7. Use a fork to test the potatoes. They should be easily pierced and soft on the inside.
8. Once cooked, remove from the oven and garnish with fresh parsley, if desired. Serve immediately.
Notes
Variations include adding cayenne pepper or jalapeño for spice, cheddar or parmesan cheese for cheesiness, or fresh herbs like rosemary, thyme, or oregano for an herby flavor. Can be served with breakfast items or as a side dish with grilled meats.
