  • 2 (11-ounce) cans mandarin oranges, drained OR 2 cups fresh mandarin oranges, peeled and segmented
  • 5 ounces mixed greens or lettuce of choice
  • 1/4 cup thinly sliced red onion
  • 1/2 cup thinly sliced celery
  • 1/2 cup slivered almonds
  • 1/2 cup vegetable oil
  • 1/4 cup white vinegar
  • 1/4 cup granulated sugar
  • 2 tablespoons poppy seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard

Instructions

1. Prep the Mandarin Oranges: Drain canned mandarins or peel and segment fresh ones.

2. Prepare the Vegetables: Wash, dry, and tear lettuce. Thinly slice red onion and celery.

3. Make the Poppy Seed Dressing: Whisk together oil, vinegar, sugar, poppy seeds, salt, and mustard until sugar dissolves.

4. Combine Salad Ingredients: In a large bowl, combine lettuce, onion, celery, and almonds.

5. Add Mandarin Oranges: Gently fold in the mandarin oranges.

6. Dress the Salad: Drizzle dressing over salad and toss gently.

7. Serve and Enjoy: Serve immediately.

Notes
