Ingredients

- 1 cup brown or green lentils, rinsed
- 4 cups vegetable broth (low sodium)
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 2 cloves garlic, minced
- 1 medium onion, chopped
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
1. Place all ingredients into your crock pot.
2. Stir to combine.
3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
4. Taste and adjust seasonings as needed.
5. Serve hot and enjoy!
Notes
Variations include adding spinach, kale, zucchini, butternut squash, a bay leaf, lemon juice, or red pepper flakes.
