Description

A protein-packed breakfast, brunch, or snack option that is quick and easy to make.  These Ham and Egg Cups are customizable and perfect for any morning.


Ingredients

  • 6 large eggs

  • 1/4 cup milk (whole milk or 2% recommended)

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Pinch of nutmeg

  • 1/2 cup shredded cheddar cheese (or your favorite cheese!)

  • 6 thin slices of deli ham


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.

2. Press a slice of ham into each muffin cup, forming a cup shape.

3. Whisk together eggs, milk, salt, pepper, and nutmeg until well combined.

4. Pour egg mixture into each ham cup, almost to the top.

5. Sprinkle with cheese, if desired.

6. Bake for 15-20 minutes, or until eggs are set and ham edges are lightly browned.

7. Let cool slightly before removing from muffin tin. Serve warm.

Notes

Substitute milk with almond milk for dairy-free. Use turkey ham or Canadian bacon as alternatives. Add veggies like spinach or mushrooms for extra nutrients. Experiment with different cheeses and spices.
