Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

1. Heat olive oil in a large skillet over medium heat. Add ground chicken and cook, breaking it up with a spatula, until browned.

2. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.

3. Stir in garlic, diced tomatoes, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until the sauce has thickened slightly.

Notes

Add other vegetables like zucchini, mushrooms, or carrots. Spice it up with a pinch of red pepper flakes. Use Italian seasoning instead of oregano for a different flavor profile. Serve over rice, pasta, or quinoa. Top with shredded cheese or a dollop of sour cream.
