Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 8 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- 2 cups egg noodles
Instructions
1. Place chicken breasts, broth, carrots, celery, onion, garlic, thyme, and rosemary in the crockpot. Season with salt and pepper.
2. Cook on low for 6-8 hours or high for 3-4 hours, or until chicken is cooked through.
3. Remove chicken from crockpot and shred. Return shredded chicken to the crockpot.
4. Stir in egg noodles and cook for another 15-20 minutes, or until noodles are tender.
Notes
Add other vegetables like diced potatoes or green beans. Use different noodles, such as whole wheat or gluten-free varieties. Serve with crusty bread or a side salad. Garnish with fresh parsley or chives.
