Ingredients
- 1.5 pounds boneless, skinless chicken breasts
- 1 cup panko breadcrumbs
- 1/2 cup regular breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- * 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 large egg
- 2 tablespoons milk or buttermilk
- 1/4 cup grated Parmesan cheese (optional)
- 1/2 cup all-purpose flour
- Vegetable or canola oil (for frying, if using)
Instructions
1. Rinse chicken breasts and pat dry. Cut into roughly 1-inch pieces.
2. Set up breading station: Bowl 1 – flour; Bowl 2 – egg & milk; Bowl 3 – panko, breadcrumbs, Parmesan (if using), & seasonings.
3. Dredge chicken in flour, then dip in egg mixture, then press into breadcrumb mixture. Double bread for extra crispiness.
4. Bake: 400°F (200°C) for 15-20 minutes, flipping halfway.
5. Fry: In 1/2 inch hot oil (350°F/175°C) for 3-4 minutes per side.
6. Air Fry: 375°F (190°C) for 8-10 minutes, flipping halfway.
7. Check internal temperature: 165°F (74°C).
Notes
