Breakfast Burrito

Description

Craving a quick and satisfying breakfast? These customizable breakfast burritos are packed with flavor and easy to make. Perfect for busy mornings!


Ingredients

  • 6 large flour tortillas (1012 inch)
  • 6 large eggs
  • 1 pound breakfast sausage (or bacon, cooked and crumbled)
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 1.5 cups cooked potatoes, diced (about 2 medium)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or your favorite blend)
  • 2 tablespoons oil
  • Salt and pepper to taste
  • Optional: salsa, avocado, sour cream, for serving

Instructions

1. Cook the sausage (or bacon) in a large skillet over medium heat until browned and cooked through. If using bacon, cook until crispy and crumble. Set aside. Drain off any excess grease.

2. Add the diced onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.

3. Add the diced potatoes to the skillet and cook until they are tender and slightly browned, about 8-10 minutes. Stir occasionally to prevent sticking.

4. In a separate bowl, whisk the eggs with a little salt and pepper. Cook in a lightly oiled skillet over medium heat, stirring occasionally, until set but still slightly moist. Don’t overcook them!

5. Add the cooked sausage (or bacon), onions, peppers, potatoes, and scrambled eggs to a large bowl. Gently toss to combine. Season with additional salt and pepper to taste.

6. Lay a warmed tortilla flat on a clean surface. Spoon about 1-1.5 cups of the breakfast burrito filling slightly off-center, closer to the bottom edge. Sprinkle with cheese.

7. Fold the left and right sides of the tortilla inward, covering the edges of the filling.

8. Fold the bottom edge of the tortilla up and over the filling. Tuck it tightly against the filling.

9. Roll the burrito tightly away from you, keeping the sides tucked in.

10. Heat a lightly oiled skillet over medium heat. Place the burrito seam-side down in the skillet and cook for a minute or two until golden brown and sealed.

Notes

Variations include vegetarian, spicy and burrito bowl versions. Can be made ahead and frozen.
