Ingredients
- 1 medium ripe banana
- 1 large egg
- 2 tablespoons all-purpose flour or whole wheat flour
- Pinch of cinnamon (optional)
- Splash of vanilla extract (optional)
- 1/8 tsp baking powder (optional)
Instructions
1. Mash the ripe banana in a small bowl.
2. Whisk in the egg until well combined.
3. Add the flour and gently fold until just combined (do not overmix).
4. Heat a lightly oiled griddle or non-stick pan over medium-low heat.
5. Pour 2 tablespoons of batter onto the hot surface for each pancake.
6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
7. Let cool slightly, cut into small pieces, and serve.
Notes
