Description

Sweet, caramelized bananas meet the warm comfort of French toast in this easy and delicious breakfast recipe. Perfect for any day of the week!

Ingredients

Scale
  • 2 ripe bananas
  • 2 large eggs
  • ½ cup milk
  • 4 slices bread
  • 2 tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 tablespoon butter or oil (for cooking)

Instructions

1. In a medium bowl, mash the ripe bananas with a fork until mostly smooth.

2. Add the eggs, milk, sugar, vanilla extract, cinnamon, and salt to the mashed bananas. Whisk everything together until well combined.

3. Pour the banana custard mixture into a shallow dish.

4. Dip each slice of bread into the custard, ensuring both sides are evenly coated. Do not over-soak.

5. Heat a large skillet or griddle over medium heat. Add butter or oil to the hot pan.

6. Place the soaked bread slices in the pan and cook for 2-3 minutes per side, or until golden brown and cooked through.

7. Serve immediately with your favorite toppings.

Notes

Use challah, brioche, or Texas toast for best results. For a healthier version, use whole wheat bread and reduce sugar. Ripe bananas are key for the best flavor.
