Ingredients
- 4 boneless, skinless chicken breasts
- 8 slices of bacon
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 green onions, chopped
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Olive oil (optional)
Instructions
1. Flatten the chicken breasts to 1/4 inch thickness.
2. In a bowl, combine cream cheese, cheddar cheese, green onions, garlic powder, salt, and pepper.
3. Spread the cream cheese mixture over each chicken breast.
4. Roll up the chicken breasts tightly and secure with toothpicks.
5. Wrap each chicken breast with two slices of bacon, overlapping slightly. Secure with toothpicks if needed.
6. Bake at 375°F (190°C) for 30-40 minutes, or pan-fry until chicken is cooked through (165°F/74°C) and bacon is crispy.
Notes
Get creative with your fillings! Try spinach and artichoke dip or a jalapeno popper filling. Turkey bacon is a leaner option.
